I don't think I've ever been to a "mystery meat" Chinese place before... there's always something I can find that's palatable! Personally, my favorite Chinese restaurants are:

Get the french-style beef steak, sauteed pea sprouts, and fried tofu. SO DELICIOUS. Also, the lobster is mouthwatering! Be prepared to go there early to get a seat or else you'll have to wait 1hr+. We got there at 4pm for dinner once and still had to wait 30 min. The place is GOOD.)

There are SO MANY awesome Chinese places on Valley Blvd in Alhambra -- another good one is Lu's Garden:

They bring it to your table with porridge that has big chunks of sweet potato in it yum~ great in winter and it's open late.
There is also the infamous Boiling Crab, which I haven't tried yet but all my friends just love:

Needless to say, if you want Chinese/Vietnamese food, Valley Blvd is the place to go. I live very close to there and we still have barely scratched the surface of what it has to offer.
