 Post subject: Honey-Soy Squash Rings

Squash is one of those things I always buy in autumn but don't know what to do with. I had a butternet squash languishing in my fridge for a few days before I found this awesome, incredibly easy recipe.

I substituted agave nectar (an entirely passable vegan honey alternative) for the honey, tamari sauce (sort of a richer soy sauce) for the soy sauce, and butternut squash for acorn squash. Next time I might skip or swap out the ginger to make it a little less Chinese-y.

Despite neither of us being a particular squash fan, Mal and I finished the whole thing between us. :)

That sounds very simple and neat! I'll definetely be giving that a try, since I bought a squash and only ate part of it. I've been looking for a good recipe to try on it ^_^
